Garde Manger

Responsibilities:
 
  • Oversee the consistency of various preparations within the cold kitchen to ensure quality product and adherence to standard recipes
  • Ensures that assigned work area has proper level of par stocks and supplies according to daily production  and maintain adequate stock for daily menus and banquets events
  • Prepares all cold food according to recipes, guidelines and standards set by the Senior Sous Chef or hotel standards
  • Maintain all refrigeration, equipment, storage and working areas up to company hygiene standard
  • Prepare and priorities food items subject to consumption needs by menu on daily operations
  • Perform any ad hoc assignments as assigned
 
Requirements:
 
  • F.5 or above with equivalent vocational training certificate
  • Minimum 8 years solid experience in culinary management or catering establishments; with at least 5 years at same position in Western Cuisine
  • Strong Knowledge of food health, safety, and hygiene compliance
  • Basic computer skills, plus good communication and interpersonal skills
  • A good team player, self-starter with can do attitude, and able to work independent
