AsiaWorld-Expo wins a culinary gold medal F&B team distinguishes itself with creativity, innovation and flair

Asia's leading exhibition and events venue, AsiaWorld-Expo, has demonstrated its culinary leadership by winning the popular California Strawberry Cooking Contest 2008.

Organised by the California Strawberry Commission, the event brought together 32 teams each comprising two chefs from restaurants across Hong Kong. The teams in this western cooking contest were given 60 minutes to prepare and present an innovative Western main course using strawberries and cod fish as the principal ingredients. They were also required to create a strawberry-based dessert.

A Celebration of Culinary Excellence
The AsiaWorld-Expo team consisted of Chan Kwai-hung and Leung Che-shing, with pre-competition coaching by Executive Chef Ricky Chan, a member of Hong Kong's Culinary Team and gold medal winner at IFHS2007. Together these talented chefs created an elegant main course of Oven-Baked Cod Fish with Strawberry Chutney, Octopus and Yellow Bell Pepper, accompanied by Pan-fried Smoked Cod Fish with Strawberry Potato Cake, Sautéed Fennel and Leek with a Little Nick Clam Cream Sauce.

For dessert, the pair prepared a Strawberry Trio of Strawberry Mille Feuille, Tempura Strawberry with Basil Honey, and Strawberry Granita - a spectacular combination that offered a true feast for the senses.

A Respected Panel of Judges
This magnificent menu soon emerged as the winner, securing first place for its creativity, artistry and culinary skill. The expert panel of judges included members of the Hong Kong Chinese Chefs Association, the Hong Kong Chefs Association, and Mrs. Anita Katial, Deputy Director, Agricultural Trade Office of the US Consulate General in Hong Kong.
